It’s about serving vanilla ice cream. It’s about making a foie gras torchon that no one might order. It’s about black truffle scented eggs. It’s about buying ingredients that can shine on their own. It’s about making your own vinegars. It’s about feeling the dough between your fingers. It’s about inspiring other people to step up and progress.
