One pan dinner in four phases
1: Preheat @lodgecastiron 12” pan. Pat @bandemeats center cut pork chops and season liberally with Kosher and freshly cracked black pepper. Sear in the pan on one side (so it looks done) and remove with tongs. Set aside on a plate.
2: While chops are searing, slice potatoes and red onions into wedges. Toss with fresh shiitakes, slices of garlic, olive oil, thyme, salt and pepper and sweet paprika. Melt 2 pats of butter in same cast iron pan and add veggies. It should sizzle. Roast in a 400 degree oven for 20 mins.
3: Make sure potatoes are cooked through. Jack up oven to 450 and stir veggies, being careful to keep their integrity intact. Place @imperfectproduce broccolini on veg medley, then place chops on top. Roast for another 10 minutes, making sure pork is to desired temp.
4: Squeeze the juice of two lemons on everything for freshness. Serve with A1 and beer.
