It’s about giving people jobs.  It’s about creating community.  It’s about clean lines and comfortable chairs.  It’s about being a bad ass cook.  It’s about ordering the right amount of food for the right amount of people.  It’s about maximizing profit and sharing the spoils of the day.  It’s about eating goat cheese, cured meats and grilled bread from the line.  It’s about spending more money on menu paper.  It’s about getting the fucking printer to work.  It’s about social media.  It’s about shaking hands and kissing babies.  It’s about being an asshole sometimes.  It’s about HR.  It’s about accounting.  It’s about making damn money so you can expand.  It’s about the 10 year plan.  It’s about the special you just put together 10 minutes before service.  It’s about liquor sales.  It’s about a good house wine.  It’s about truffle season.  It’s about good carrots.  It’s about eating out and seeing what everyone else is doing.  It’s about reading the New York Times food section.  It’s about whether you’re going to chase a trend. It’s about serving vanilla ice cream. It’s about making a foie gras torchon that no one might order.  It’s about black truffle scented eggs.  It’s about buying ingredients that can shine on their own.  It’s about making your own vinegars.  It’s about feeling the dough between your fingers.  It’s about inspiring other people to step up and progress.  It’s about letting them go so they can fulfill their dreams.  It’s about not stopping.  It’s about hope.  It’s about family.

It’s about time.
